Carrots Julienne

This recipe, although a little time consuming to prepare, is an excellent recipe for when you have a shortage of hob space and an oven on the go for a roast or some thing similar. Having said that it cooks equally well in a microwave oven.

I have made this with and without garlic, and either is as good to taste

Serves 4 with preparation about 15 minutes and cooking time 30 to 35 minutes in an oven and 20 minutes in a microwave

Ingredients

250gm/12oz/  cup carrots, pealed and cut into matchsticks

1/2 medium onion finely chopped

1 clove garlic minced (optional)

1 heaped tablespoon of tomato puree

1 tablespoon of olive oil

1 teaspoon dried mixed herbs

salt and pepper to season

Method

  1. Put the julienned carrots into a 1 litre pyrex dish with a lid.

  2. Add the chopped onion, minced garlic if desired, dried mixed herbs, tomato puree, olive oil and season.
  3. Stir thoroughly to ensure that all the carrots are well coated with oil and tomato
  4. Fit the lid on and bake in a pre-heated oven set to 180C/350F/Gas 4/moderate for about 30 – 35 minutes depending on your preferred texture. Alternatively cook in a microwave at approximately 750 watts for 15 – 20 minutes.
