This recipe, although a little time consuming to prepare, is an excellent recipe for when you have a shortage of hob space and an oven on the go for a roast or some thing similar. Having said that it cooks equally well in a microwave oven.
I have made this with and without garlic, and either is as good to taste
Serves 4 with preparation about 15 minutes and cooking time 30 to 35 minutes in an oven and 20 minutes in a microwave
250gm/12oz/ cup carrots, pealed and cut into matchsticks
1/2 medium onion finely chopped
1 clove garlic minced (optional)
1 heaped tablespoon of tomato puree
1 tablespoon of olive oil
1 teaspoon dried mixed herbs
salt and pepper to season
- Put the julienned carrots into a 1 litre pyrex dish with a lid.
- Add the chopped onion, minced garlic if desired, dried mixed herbs, tomato puree, olive oil and season.
- Stir thoroughly to ensure that all the carrots are well coated with oil and tomato
- Fit the lid on and bake in a pre-heated oven set to 180C/350F/Gas 4/moderate for about 30 – 35 minutes depending on your preferred texture. Alternatively cook in a microwave at approximately 750 watts for 15 – 20 minutes.
